The Pastry Alliance of the Philippines emerged victorious from the recently concluded Hong Kong International Culinary Challenge 2009 (HKICC), held in conjunction with HOFEX at the Hong Kong Convention and Exhibition Center from May 6-9.

The four day culinary competition, was divided into 7 main events namely: Western Cuisine, Chinese Cuisine, Ice Carving, Pastry, Live Baking, Live Pastry and Gourmet Team Challenge.

Our very own PAP Team participated in 7 categories and bagged 8 medals from the various competitions. This is the Alliance’ first competition since its inception in November 2008.

This year’s team consisted of Pastry Chefs, instructors and students from various hotels and culinary academies. Leading the team was international culinary competition veteran and Pastry Alliance Vice-President, James Antolin. James was instrumental in all the team and individual practices leading up to the competition and organizing the day to day concerns of the team.

The Pastry Alliance of the Philippines received the following awards:

Amador Mendoza, Bellevue Hotel, Bronze Medal, Pastry Showpiece
Penk Ching, Pastry Bin, Bronze Medal, Pastry Showpiece
Melecio Avino, Manila Pavillion Hotel, Silver Medal, Individual Ice Carving 
Kim Naval, CCA Student (with coach/instructor Alma Cui, CCA), 
Bronze Medal, under-25 (years old) individual plated dessert
Buddy Trinidad, Park Avenue Desserts, Bronze Medal, “Fantasy Table” live pastry

The event everyone was looking out for was the "Live Bakery" category where team members from different countries were given 2 days to make a bread showpiece, 2 traditional french breads, baguettes, rolls, crown bread, German rye, croissants, danish pastry, ciabatta, multigrain, 3 different asian buns and a special bread free of limitations.

Our team consisted of Roel Vargas (CCA), Charlene Ngo (CCA) and Ria Lingad (IFC). The look of utter surprise and shock was palpable as the judges announced that the Gold Medal for Live Bakery was awarded to the Pastry Alliance of the Philippines. It was truly a moment of great pride and joy!
